Collect your equipment. You'll need a mixer, 1 cup, 2 containers, a dessert spoon and a baking tray lined with baking paper.
Separate your egg whites. Put the yolks into a container and you can freeze the yolks and use for another recipe.
Preheat the oven to 120C fan forced.
Start whisking on a low speed and add a pinch of salt.
Keep whisking until soft peaks form.
Start whisking again on a higher speed and slowly add sugar spoonful at a time.
Check sugar has dissolved by grabbing a bit of mixture and rubbing it in between your fingers
Spoon out mixture and each on should be about a dessert spoon size. Cook for 1 1/2 hours or until meringues are crisp.
Present your meringues with anything e.g cream, peppermint crisp, raspberries, summer berries, mangoes, and banana.
